Hot peppers and what to do with them?

I planted a few too many hot pepper plants. The tags said they were salsa peppers. Dh get heart burn if I use anything over a pinch in the recipes. Can I dry these peppers in the dehydrator and then grind them up into "chili powder"? Any other suggetions. I am sure that I have 2-3 gallons setting on the plants.
