Cheap and Easy Corned Beef Pie!

This is my mothers recipe we have eaten since I can remember. It is fabulous hot or cold and is cheap and very easy to make.

1 tin corned beef 12 oz.
1 small tin baked beans, or one large one if you do not like Red kidney beans.
1 small tin red kidney beans (very well washed).
1 medium white or red onion finely chopped.
2 grated or finely chopped cloves of garlic.
2 tablespoons tomato puree.
1 pinch of dried basil.
1 pinch of dried thyme.
This is optional but II like it, 1 teaspoon of curry powder (of your taste).
Good splash of Lea and Perrins, Worcestershire sauce.
Tabasco (if liked), to taste.
Black pepper to taste.


Line a deep pie plate with shortcrust pastry.

In a large bowl put onion , beans, both kinds, or just one or the other depending on your taste, and the garlic.
Chop corned beef up into small chunks and add to the bowl, then add tomato puree, Lea and Perrins and a spot of Tabasco (if liked).
Stir all the ingredients together and put in pastry lined pie plate. Place a pastry lid on top and crimp edges, egg wash and cook
in a hot (200C- Gas mark 6/7 - 400-425℉ for 30 mins till golden brown). Allow to cool. If you fancy a change make circles of pastry using a teaplate as a template,
and put some of the mixture in and shape like a Cornish pastie, crimp edges and eggwash and then place on a baking tray and cook for 23-25 mins at the
same temperature.
Simple and delicious!
