Scotch Pancakes or Drop Scones.

London, United Kingdom

They may be called different things all over the World, even in Britain they have two names, Scotch pancakes or Drop scones.
Essentially they are the same, delicious, simple things!
Here is my Grandmas 1917 recipe.

8ozs self raising flour.
1/4 pint of milk - 1/4 pint of water.
1 medium egg.
1 rounded tablespoon castor sugar. I think you call it fine sugar or confectioners sugar.
1/2 teaspoon bicarbonate of soda.
1 level teaspoon cream of tartar.
oil for greasing,

Method.

Sift all dry ingredients into a bowl. Make a well in the centre, then break the egg into this and start whisking, gradually add all milk and water until you have a lump free smooth batter.
Heat a griddle or a very heavy based frying pan and wipe it round with a little oil on a piece of kitchen paper.
With a table spoon take a spoonful of the mixture and pour from the tip of the spoon onto the pan (this will ensure you have a rounded scone). Cook till brown on one side(little holes will start appearing on the top), then flip over and cook till other side is brown.
As they come off the griddle/pan, pop them on a warm plate and cover with a cloth or napkin, this will keep them warm. Serve as soon as possible with honey, jam or maple syrup and loads of cream. This makes about 24.
That is thin ones, not many of my thick ones, like I made this afternoon.
Regards form England.
Neil.
