Thick & Sweet Soy Sauce
1 cup mirin wine
1 cup sake
1 cup Japanese soy sauce
1 cup dashi
1 tbsp sugar
Warm the mirin and sake in a saucepan over moderate
heat. Remove the pan from the burner. Carefully,
ignite the mixture and shake back and forth until the
flame dies. Return pan to the burner and add the soy
sauce, dashi and sugar; bring to a boil. Cool to room
temperature. Yields 1 Quart
or this
2/3 cup soy sauce
1 tsp garlic, minced
2 tbsp dry, ground mustard
2 tsp ground ginger
2 tbsp onion, minced
4 tbsp molasses
1/3 cup grape seed oil
Put soy in a small bowl. Whisk in ground mustard, ginger, garlic and onion; add molasses and stir well. Add oil and mix well; use immediately.
