Wine substitute??

For all the wonderful recipes calling for wine, I was wondering what you can substitute? A member of my family has an "alcohol allergy" to put it nicely, and I don't want to cook anything with wine when he is visiting. Yes I know they say it cooks out, but want to be absolutely sure.

Substitutions anyone?
