I'm starting a separate thread for recipes that everyone wanted to share. I know we have the brownies and maybe someone can cut and paste it into here. I know I'd like Pony's bread recipe and she may have actually already sent it to me. And I'm sure there were others! Just everyone who made something, post it here, if you'd like.

Mango Brie Quesadillas

Fresh mango, sliced (I have also used canned, but drain it well or it'll be too juicy and mess)

plain brie cheese

flour quesadillas


Lay out one tortilla, arrange some sliced mango and sliced brie, top with another tortilla and grill it on the bbq or on a griddle. Flip and grill on the other side.

Easy peasy!

Teriyaki Sesame Dip

Garlic powder
cream cheese
toasted sesame seeds
honey teriyaki sauce (I use Tastefully Simple brand)
chopped green onions
chopped peanuts
toasted sesame seeds

Mix the garlic powder and about 1 T toasted sesame seeds into the cream cheese (go ahead and use your fingers!) and spread it out on a plate. For a dinner size plate, use the 8oz pack of cream cheese. For a smaller plate, use the 3oz size.

Spread some honey teriyaki sauce. Get a sauce that's fairly thick. Just spread a layer on the cream cheese.

Then top with the other ingredients.

I like to serve this with wheat thins.

Cranberry Pumpkin bread
-------------------------------

1 16 oz. can whole berry cranberry sauce
1 15 oz. can pumpkin
1 cup mild molasses
1/2 cup vegetable oil
4 large eggs

3 3/4 cups flour
1 cup sugar
2 1/2 tsp soda
3/4 tsp salt
1 tsp baking powder
2 tsp pumpkin pie spice
3/4 cup chopped pecans

Mix first 5 ingredients in large bowl
mix remaining ingredients in separate bowl, stir into first bowl gradually until well mixed.

Divide evenly into 2 greased and floured 9x5 loaf pans

Bake at 350° for 65 minutes or until wooden pick inserted in center comes out clean.

Here you go. I recommend using a higher quality cocoa than Hershey's. Scharfenberger is quite good.
There are others but I don't know what's available locally.

Preheat oven to 325°
Grease a 9 x 13 inch pan

3 eggs
2 Cups sugar
1 Tablespoon vanilla
8 oz cream cheese - softened
1 cup butter - softened
1/2 Cup unsweetened cocoa or 8 oz. baking chocolate
1 1/2 Cups unbleached Flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 Cup chopped pecans or Macadamia nuts
6 - 8 oz. shredded coconut


Combine Flour, baking powder & salt - set aside

Cream sugar, cream cheese, butter
Add eggs, vanilla & chocolate
combine this with the flour mixture
Stir in nuts & coconut

Spread in prepared pan, bake for 45 - 60 minutes.
Baking time will depend on your oven.

This is a great "base" recipe. I play with it each time i make them. Very good with toffee chunks, chocolate chips, 1/2 peanut butter & 1/2 cream cheese, Ginger (lots) with Black Pepper (makes it spicy), Mexican Chocolate & 3 tsp Cinnamon, blah, blah, blah... Enjoy!

I made the brownies yesterday. In keeping with our apple theme for our apple pressing party, I added apples. It was hard to get them cooked enough in the center and not burnt on the outside, due to the extra moisture added from the apples. And I only added one half an apple, diced very small.

Next time I might leave out the vanilla, if I added apples.

They were really good tho, even with the gooey-ness.

As a general rule, if I add more moisture (via fruit) to something, I adjust the flour, adding 1/4 - 1/3 cup until the batter/dough "feels" right.
Also - this is a good recipe to make the day before - after it cools, place overnight in the fridge so it can densify.

It's a great descriptor for what happens when you have cream cheese in anything baked.
Densification and flavour mingling altogether.
Sheesh, now I want some brownies...
Gwen - that sounds pretty good with the apples. I add cocoa to a lot of recipes, but in small amounts - like tablespoons. I'd try making this with less cocoa(3 TBSP?), more apples, more flour, cinnamon and lessee...what else? Nuts & toffee chunks. I need coffee for this fantasy treat.

Well, better late than never...here are the recipies from Sunday's breakfast:

Sharon's Sunday Souffle

1 pound bacon, ham or sausage, cooked and drained
1 dozen eggs
1 cup milk
2 c shredded cheddar cheese
white bread with crusts removed.

Butter a 9x13 glass pan.
Line with crustless white bread
Lay prepared meat on top of bread
Then layer the shredded cheese

Blend eggs and milk well with desired seasonings

Pour egg mixture over all and refrigerate.
1/2 hour before baking, remove from fridge

Bake in preheated oven at about 300 degrees for about an hour or so.

Five Cheese Souffle

Blend 1 pint cottage cheese with 1/2 cup flour and 1 tsp baking powder.
Add 1/4 cup melted butter and 4 oz. green chilies. Then add 1 pound shredded 4 cheese blend and an additional cup of shredded cheddar.

Beat 1 dozen eggs well with 1/2 cup milk. Add to mixture. Add meat if desired.
Pour into 9x12 glass baking dish.
Bake at about 325 for about an hour.

Sharon and Julie's Fresh Salsa

4 cups chopped fresh tomatoes
1 cup chopped Walla Walla onions
1 tsp minced garlic
7-8 oz canned green chilies
2 TBSP olive oil
2 tsp cumin
2 TBSP cilantro
1 1/2 tsp salt
2 TBSP wine vinegar
1/4 tsp pepper

Adjust seasonings to taste. Refrigerate.

I just took a batch of the brownies out of the oven. The house smells wonderful. :) Tracy doesn't like nuts and I don't like coconut, so I substituted an obscene amount of chocolate chips. :D
