Gluten Free Bread

Temuco, Chile(Zone 9b)

Gluten Free Bread
Mix and beat 1 ½ cups warm water
4 eggs
2 tbsp oil
1tsp lemon juice

Mix 2 cps tapioca flour
2 cups of rice flour 2/3 cup powdered milk
4 tsp Xanthan gum
½ tsp SALT
¼ cup sugar

Mix ½ cup warm water
2tsp sugar
4 tsp yeast let it sit until foamy

Add wet to dry and then the yeast, beat well by hand for 2 minutes, allow to rise till double (1/2 hr) put it on oiled pan, bake at 350F for 25 minutes.

You can make into separate buns , bake for 15 minutes. Shape using rice flour.

For cinnamon rolls, roll into a rectangle onto a flowered board with floured saran on top.
Dot with butter and cinnamon/ sugar. Cut ¾ inch wide. Frost with powder sugar glaze.
