Brunch Omlettes for large parties

I had to share this because of it's simplicity, ease and delicious taste!

I went to a brunch a few weeks ago with about 20 plus guests. As soon as I entered the house, I was asked to pick up one of the felt marker pens and write my name on a mid sized freezer bag. I had no clue what for.
On the counter was a bowl full of eggs, and a row of prepared items like green peppers, mushrooms, onions, ham, cheese- things to put in an omlette. This is how it worked. The guest picked out two egs, cracked them and put them in the freezer bag, then mushed the eggs up well. The guest then moved down the row of omlette condiments and put in whatever item they liked in the omlette. On the stove was a large kettle of boiling water. The guest put the bag with contents in bag, and all of the air squeezed out next to the pot and when the host aquired about 10 or so bags, placed them in the boiling water for 13-16 minutes. When the time was up, the bags came out names called, and the guest popped the omlette out onto the plate, and it was delicious.

medium freezer or steamer bags
large kettle, pot with boiling water - (It helps to use a lid -vented- if there are more than 4 bags)
eggs
omlete items

place 2 or desired eggs in bag, squish, shake, mix- 2 eggs seem to go a long way.
add omlette contents to bag and eggs, mix gently
squeeze air out of bags
place bags with contents and names on the bag in boiling water- we've done as many as 12 at a time
boil 13-16 mins - lid opitional, make sure it's vented or not on tight
Remove bags, easy to tell if omlette is done.
open bag and omlette slides out with surprising ease.

I decided to try this on a family trip last week in Victoria Canada, everyone loved the idea and the omlettes. It's great, because the host can have all of the items prepared before hand, can accommodate guests at different arrival times with ease and the taste and form of the omlette was perfect. Bags now come in shorter steamer style which worked perfect!
Have fun, enjoy..I'll NEVER make omlettes the traditional way again.
