i was so impressed with daves mustard and how well it tasted that i decided to try it in the slow cooker
3 boneless, skinless chicken breast
one large onion cut into 1/4 inch dice
2 ribs celery cut in 1/4 inch dice
4 sundried tomatoes in olive oil (leave whole)
about 20 cherry tomatoes, crushed
1/2 cup any type of good drinking wine, i used white
about 3 tbls daves mustard (see his post on this forem)
lightly brown the chicken breasts in oil over medium high heat.
remove when done and coat them with the mustard and set aside for a few minutes.
put all other ingredients into the slow cooker. top with the chicken breasts.
cook on low temp for about 3 hours. after 3 hours check to see if chicken is cooked through but still moist. do not overcook because the chicken will end up dry.
when chicken is done remove and set in set aside uncovered. . remove half the veggies and liquid and put into a blender. be careful, it's hot. blend until it thickens.. take remaining veggies and liquid from slow cooker and put into a pot. add the blended veggies and stir together.
as a side dish i made quinoa (sp) and placed the vegetbles and sauce on bottom and topped it with a chicken breast and then a bit more sauce.
came out great and the mustard taste is outstanding.
