a chewable pork chop

I have sworn off buying pork chops many a time as I cant make a good one...dry and tuff no matter what. I just fell off the wagon and bought a pack of plain ole assorted chops on sale. Does anyone have a way to cook chops that makes them chewable and yummy. Since there is no fat on meat anymore, its hard for me to get tender. We used to always cook a whole ham at easter and Christmas on the grill.sooo yummy. We have stopped doing it, as there is just not such thing as a ham with any fat on the top anymore. I mean how do you score the fat for the cloves and what keeps it moist. NOTHING...and it taste like it!!

Do you brine chops like chicken. I always brine my chicken before frying.
