My lettuce went to seed is it still good to eat?

It won't taste as good and might be tough, but you won't die or anything.

Bolted lettuce is usually fairly bitter. Try it and see if that's true for yours. Otherwise it won't hurt you.

I read somewhere that if you rinse lettuce with warm water it removes some of the bitterness. I haven't tried it.

I've read somewhere that if you chill bitter lettuce for a bit it will take the bitterness out. Haven't tried it myself.

If they are bitter use them as you would kale or mustard or other greens that are not sweet. I rarely make a salad that does not have contrasting elements. Or you can stir fry it or saute' it (pretty much the same thing). Add a touch of vinegar salt and pepper and you have a traditional side of greens.
