my Gazpacho

New Madison, OH(Zone 5a)

Well...Dea asked me to share my recipe for Gazpacho...so here it is.
This is a combination of several recipes I found on the internet....and I worked with what I had on hand.
I only had one ripe tomato...so I used a can of diced tomatoes too.
1 onion chopped fine
1 green pepper..chopped fine
1 large cucumber, chopped fine and seeds scooped out first
1 zuchinni, seeds scooped out and chopped fine
Some fresh parsley..didn't measure?
Fresh dill
Fresh basil leaves
minced garlic from a jar...about two tsps.
3 Tlbs. of worchestershire sauce
1/4 cup EVOO
3 cups V-8 juice, low sodium kind
1 tsp. salt
3 Tlb. red wine vinegar
dash of lemon juice
1 slice bread, crusts removed and soaked in a small amout of water
I mixed all this together...mashing the tomatoes up as much as I could. I had chopped my veggies in a small electric chopper. Add the EVOO last...and the bread. Mix well and Chill.
I put mine in a big pitcher and put it in the freezer for a while. Also chilled the cups we put it in.
Top with sour cream and chopped cucumber.
It was delicious!
