Need summer sausage recipe Without Nitrates

I have some venison in the freezer, and I want to make summer sausage with it. I've done this before, but used the tender quick cure, and I don't want to put nitrates in my summer sausage.

Does anybody have a recipe without the nitrates in it?

I need this by this weekend if possible.
