I HAVE A LITTLE EXPERIMENT GOING ON HERE!

I read somewhere that you could cut off the flowers of an epi and they would last beyond the night they bloomed. It's true! I'm trying to see just how long they will last. My friend who has faithfully watered and tended to my plants when I am not home happens to be away. She hasn't had the pleasure of seeing these open, so Saturday night about midnight, I cut these two blooms, wrapped the ends of the stems in damp paper towels and put them in a cake keeper (inverted) and set them on the bottom shelf of the refrigerator. This morning, they are still partially open and when I lifted the lid, they are still fragrant.

You can freeze the flowers in a bag, fragrance last for awhile.
