I need a KY Sour Apple Pie Recipe.

One of our Family traditions was Sour Apple Pie and Sour Applesauce.

Made from Lodi Apples Mom and Grandma would peel and cut bushels.
Peeling while of course never looking at the apples, talking away and most of the peels came off in one piece.

But I don't have ready access to to her recipe.
Have the Lodi's, have the crust recipe..... yes Lard is a must!...... just need the filling.

Any help?
