I would like some ideas.
I have a very close, very good friend who loves my cookies. I have known him a long time, and consider him the brother I never had. I have made a ton of cookies for him through the years! I am older and now have some health issues... making cookies is not as easy and fun as it used to be. In a couple weeks, I will be going to visit him. I would like to take some baked goods to him. I was thinking if I could make some bar cookies - they would be a lot easier for me to do, and he doesn't care what shape they are as long as they are good.
This friend has helped me out so many times through the years... making some cookies and stuff for him is the least I can do.
I don't have many bar cookie recipes. I have a ton of books, but I hate to put the time and effort in to making things that may not be very good --- I would rather try things that my friends recommend -- and I consider the folks here at Dave's my friends..... :-)
He does not like chocolate. He likes spice cookies, molasses, nuts, oatmeal, mincemeat, dates, any kind of dried fruit like raisins, cherries, cranberries. He is kind of a health food nut, except for the baked goods I make - I think it makes him feel less guilty when I bring him oatmeal raisin cookies, as an example. And, I always leave off any icing or gooey topping so its not "too sweet".... but then his favorite pie is pecan and how much more sweet can you get than pecan pie??? LOL
He says he likes chewy better than crispy.
If you have any recipes that you can share I would really appreciate it!
