I have lots and lots of wild plum trees here..These plums are very very tart even when ripe. Did I mention they are tart?

For years the only thing I have tried to make out of the plums is jelly.. to do this I mix the plum juice with elderberry or something not so tart and of course lots and lots of sugar..

Any ideas? I am going to have a bountiful crop...
