TROPICAL HONEY BLUEBERRY CAKE

Toadsuck, TX(Zone 7a)

Okay, this is one I made up in my own head....DH loves it, it is his very favorite.
This one you have to guage your own oven to and watch the first couple of times you do it....you want it done, but not dry.

Preheat oven to 375F.

12 oz crushed pineapple in natural juice, undrained
10-12 oz. frozen unsweetened blueberries
3 over ripe bannanas, mashed
2 C. Whole Wheat Flour
2Tbsp. Wheat Germ
1 tsp. baking soda, heaping
1/4 tsp. salt
1 large egg, well beaten
1 Tbsp. Vanilla
1/4 C. Canola or Olive oil ( I use canola mostly)
1 Cup Honey
6 pkts. (6 tsp) Truvia or granulated stevia of Choice

Mix all dry ingredients in a large bowl. Mix together Fruits and wet ingredients in another bowl. Combine and pour into 9x13 baking pan, sprayed with nonfat cooking spray.

Bake 45-55 minutes until done, will be moist, don't overcook.

I frost this cake with either Sweet & Low White Frosting mix, (I get this at Albertsons), or Dream Whip, or Cool Whip mixed with 1 small Pkg. sugar free vanilla pudding.
