Someone asked me this and I realized I don't know. Is it the older leaves on the outside or the newest, just developing leaves?

I think it's the older leaves, but you know now that I think about it I'm not sure either...
older outer leaves are bitter. on leaf lettuce when they are young, I generally eat the outer until they start to get bitter than justt use the center.
