Beginner Gardening: spearmint gone wild, 1 by brownthumb78

When I planted my garden I put 2 small spearmint plants right smack in the middle. I didn't put them in pots or containers just stuck them right in the ground. Now I realize this was bad. It is spreading like fire. I'm afraid it will strangle my other plants bcuz its growing up & sideways. I like to use it 4 teas & salads so would like to keep some, but how do I do that w/out putting everything else at risk? Do I dig it up & replant it elsewhere? Can I do that? Or trim it?
