My method is to pull up the plants, peel off a dry leaf layer (which gets some of the dirt off too), and place them so the bulb is in the shade of the neighboring garden bed and the leaves can be in the sun to get a head start on the drying.

Some people form a windrow with the garlic leaves of newly harvested plants placed to cover up and shade the bulbs of those harvested just before. Some just pull them up and get them inside as quickly as possible.
