Anytime in Feb is good to start them maybe even March would probably be fine, as they grow pretty fast. I do find that some of my saved potatoes are already trying to start as they are putting up small shoots. I just like to grow a lot of them to share and by starting early I can produce a lot of them by May. I even pinch back the big ones and start those, too. Plus it helps with those Feb gardening impulses. I might have some pictures you can use. D-mail me. Holly
Pretty sure these are potatoes from the Ace of Spades that Ladyg gave me. All this growth was on them when I took them out of the bags they were stored in. Some of the others are also showing a few signs of growth but nothing this big.
