Brussel's Bonsai in Olive Branch, MS (actually Memphis, TN) does a great weekend set of classes on Memorial Day weekend. 3 days of classes, or you can just pay the registration fee and watch. They have demonstrations all weekend, and I learned SO much, just from watching. Also, they have a huge nursery, and you can walk through and shop or just daydream. Well worth the trip! Here's a picture of my Crabapple bonsai, covered in snow (the one with the thicker trunk).
