Back to the koi and the pond, as for shade the koi gather under the waterliliy leaves in the heat of the day. The small boulders around the edge of your pond look great and will get better and better as the plants fill in among them. Your pond looks like it would lend itself to adding a stream leading to another deep pool of water. It just goes on and on, but what great obsession. lol
One thing I do is use milk crates to sit flagstones on and pile on a few rocks or plants. Then the fish can hide under them and evade predators. Looks nice, too. Parrot's Feather would look great tumbling down your waterfall area. The baby fish love to hide in it. Here is a picture of my Lady of the Waterfall with the parrot's feather growing all around.
