Do you have a farmers market in your area? You can grow a lot of herbs in a small green house. Do you have trees or woods at your disposal? You could collect vines in the spring and make wreaths for holiday decorations. There are lots of easy crafts for using pine cones if you can get them. Lots of ideas but who has the time, right? LOL Here is a novel idea for a Christmas tree. I saw it at a western store. It is made from old barbed wire. I would love to make myself one.
