Your saffron will do okay in pots, they do better in the ground. They only bloom for a couple weeks at best, the rest of the time they are just clumps of grassy foilage. They are hardy in the Sea-Tac area. I would worry about them if you have a long hard freeze. If the pots freeze for a long time you may lose them. It is freezing and thawing and freezing again that will do them in. In the ground the temps don't change quickly so they adapt. Good luck.

Here is a plant that would have to grow inside-
