If they are growing then water will be needed. If somewhat dormant then water sparingly. You can cut them back if you want to but you may want to wait until spring when they start growing again.

That being said, they would do a lot better in the house over winter - no die back, no cold damage, etc. You can cut them back indoors and start the tops in another pot as well as long as it is warm and you have light.

Here is my tallest (almost six feet) and I chose to keep this growing versus cutting the rest of the canes.
