I cut up a small piece of potato and left it alone for a few days. Its got these tiny green shoots coming up. What can I do now with it? Can I just put it in soil and expect it to grow?

How do I ensure no one is eating up the potato inside the soil (thats what happened when I tried to plant carrots last time, there were nice greens on the top but the orange was eaten up).

Do I need to keep it wet, this potato piece, how big a pot do I need, when is the right time to put it in soil?
