I buy those disposable cake pans at the grocery store, think they come in all sizes, and you can get them with clear plastic lids. A set of 2 in a 10" x 12" size usually costs approximately $3.

Here is a pic of a tray of mini's I just finished doing, they are in little one ounce cups, so I could fit alot in one tray. For somereason the side of the lid facing the camera turned white from the flash, but it is really just clear.
