Just thought of something: It's probably not a very good suggestion and I don't even know if it would grow in the south but Quick Fire paniculata hydrangea's blooms change from light pink to a darker color in the fall. I just planted mine this year so I'm just learning about it. Some of the blooms already look darker in the pic.
